Having used it for the last year, I have no complaints. There are many great features on this knife, including a great grip, great weight and a great It is true that there are more expensive knives with better capabilities, but for me, this is a very happy medium between price and features. This product has been used on a number of items by my wife. Since she started giving me examples of how easy it was for her to cut food she struggled with, I knew it was the right decision. You could get her to pick up a slice of something and exclaim how SMOOTH it was and how easy it was to slice. The tool was used to slice filets of meat. During my first use of the blade I quickly forgot all my reservations and hesitations, as I sliced through the filets like it was hot stick through soft butter. A bread knife and a larger knife will be the next blades. A blade with a length of 12".
Compared to other knives, Shun knives are great. This model is one of four of my cups -- I have an 8" Chef, 7" Asian, and a Paring. The other knives I own are not even close to these. I am incredibly picky about what knives I own. Japanese knives have a steep edge angle, so they have a sharp edge. They are very easy to use because of that. In addition to being hard and durable, steel is also very durable. The 7" Asian blade on my knife has never needed sharpening. In order to maintain the quality of my knives, I take great care of them. I wash my knives before placing them on the magnetic knife holders and then dry them. There's no question you can pay more to impress your friends, but I highly doubt you will get a better knife. They're an obvious choice.
In the end, I did not buy a nice set of blades until I got tired of having to keep replacing them. The vegetables cut really nice and I no longer have to saw them. I was afraid they wouldn't be worth the price but they are perfect. It is so nice that they have been sharp for months without me having to sharpen them.
