The Yoshihiro Kurouchi Super Blue Steel Stainless Clad Series are among the best in the world. Black Forged 'Kurouchi' Finish is the result of a carbonized coating created during heat treatment, and it provides the blade with a characteristic look and rustic aesthetic. The Super Blue High Carbon Steel, refractory high carbon steel, is considered the best high carbon steel metallurgy in its class for its Rockwell hardness of 64-65.
Two layers of Kurouchi stainless steel are clad on both sides of our Yoshihiro Kurouchi Stainless Clad Knives, providing maximum durability and protection without sacrificing the quality of the blade. In the traditional Kurouchi knives, the finish is always on the highly reactive carbon steel, but in the case of this knife, the Kurouchi finish is on the stainless cladding, a way to make the highly rare and difficult to produce Stainless Cladding.
Among all knives, the Kiritsuke is one of the most versatile and essentials a cook can obtain. It has a wide blade, a straighter spine and a curved tip than a standard chef knife. knife's wideness and its straight end make it suitable for chopping vegetables while its long curved tip allows it to be used for slicing thin slices from fish or meat.
We take pride in making products in Japan that are not mass-produced. The knife comes with a Western Style handle that extends from the full tang of the blade to the handle. This handle is ergonomically joined to the knife to allow for a seamless grip. The knife comes with a protective wooden sheath called a Saya, which protects it when it's not in use and enhances its performance. Each knife from Yoshihiro is made by hand by master artisans, resulting in a work of art that is unique.
Japan has a long history of making knives with a sharp edge, which requires care and attention. The only water whetstones to be used for sharpening and honing are those made of calcium carbonate. Handwash and dry only, and if you're working with acidic ingredients, do so as soon as possible. It should not be used on opaque objects such as bones, nutshells, and frozen food. It was perfect in every way and as sharp as I wanted it to be. I love how well constructed the knife is, how pretty it looks, how comfortable to hold, and how easy it is to use.
I am a professional cook and have moved my home knives to work just so I could use this bad boy at home. I strongly recommend this knife for people who love to cut up food into bits and are looking for some spare dough. I bought the Shun and the edge made me uneasy. The return was made and this attempt is being made. This knife is my favorite and I would highly recommend it.

I was immediately drawn to this knife when I saw it for the first time. A photograph of this wavy damascus pattern and shape gives a great sense of what the item looks like. You have to see it in person to appreciate the beauty. Whenever I look at it, the damascus catches the light beautifully. With a razor-sharp blade, it made short work of the phone book paper and didn't tear at all. With its handle, the knife feels good to hold both in the hand and in the pocket. Knives in the Kiritsuke shape feel great in the hand. When it comes to cutting and chopping vegetables, it does a fantastic job. Aside from cutting and carving meat quite well, it also slices and dices. I also find that it fillets fish better than some of my cheaper fillet knives, although not as well as some of my nicer ones. I think this is an all-around good game A rounder This is my first Yoshihiro knife, and I won't be the last person to own one.
