The edge is expected to last a long time. Because I have only used the knife for a brief period, I cannot grade it just yet, but if I have the chance, I will inform you all of my It is easier and better to sharpen a stone if it is wider The eight stones I made were made by gluing together two 1000 grit stones. He had complained about losing his Japanese carbon steel knives some years prior (I had no idea how such a knife were lost, and honestly In that case, I decided to surprise him with this knife.

After browsing ratings and reviews for about half an hour, I chose this knife in particular. Chefs' reviews of dozens of knives played a big role in choosing the right knife. This knife has been a great purchase for my guy and despite not being a chef, he is a medical doctor, so I think he uses objects sharp enough to deal with flesh when he uses it.

The first thing I know about knives is that they are not my specialty. In addition, I have limited experience working in restaurants. Having said that, I'm happy to say that in the short time that I've owned it, it has performed exceptionally well. It's heftier than I'm used to, but I could immediately tell there was a difference in quality from other knives I own. I enjoyed the extra blade space in case I want to prepare something larger, and I could use it long after I'm done working at the restaurant. Especially if you're new to the knife game, you should check this one out. The purchase was recommended to me by others who are much wiser than myself, and I'm not at all regretting it.

Craftsmanship of the highest quality. A budding chef likes to experiment in the kitchen. Rather than a one-off purchase, this knife is by far the best I have Even through rigorous prep work I put it through, this blade will keep its sharpness for days on end even after it has been sharpened to an amazing degree on a whetstone. I find it much easier to do my job this way.

This knife is great because it has stain resistance you will rarely have to clean it as often as you would with high carbon steel, and it has a hardness of 60 on the Rockwell C scale, which is the hardest possible hardness for a stain-resistant knife. You will never find a better knife with these qualities for this price. It is also lightweight and has incredible balance. You won't find a better knife like this at this price.
