I know this is a silly Which is the "difference" between this pan and the one sold by the same company for less money? Is there anything else in the name other than "pro"?

I just want to clarify that. Typically, Chef's Choice pans feature a disk at the bottom of the lids. There is a seam along the bottom of the disk about 1/2" up from the beginning. A disk with three layers looks like this It is aluminum/stainless/stainless. The downside of stainless steel is that it does not conduct heat evenly, so if you use a skillet for example, you'll notice that the sides will start A new MultiClad has been added for better construction efficiency. Rather than just a disk on the bottom, the entire bottom of the pan is made of stainless steel/aluminum/stainless steel. Consequently, this method allows the heat to spread more evenly and consistently. Because of the good reviews here on Amazon, I chose this stainless roaster. I received it as promised, and it had a rich, shiny finish when I opened it. My next day I was having company and I prepared a standing rib roast. It was suggested that I put it in the oven for 40 minutes at 500 degrees, close the door, and not open it for two hours. The prime rib I pulled out of the oven after two hours, still have the oven off, is cooked perfectly and is Despite my efforts, the bottom of the pan had become copper colored and when I washed and cleaned it, the stainless coating had flaked off. Nothing had been cleaned from the pan to bring it back to silver or clean appearance. In the end, the rack that received the low scores on the review, actually cleaned up like new and came through beautifully. Although the rack will most likely be used with every roast, it won't hurt anything that the stainless flaking off the aluminum core is there. Still, it stinks that you pay good money for a quality brand like Cuisinart and end up with a total garbage product This junk should not be consumed unless you are preparing a roast of Cornish hens or slow roasting at low temperatures. mom's 60 year old blue speckled roaster is still the best roaster I have ever owned.

Out of the box, the products ripped and flaked

After use, the products pitted and flaked. Upon purchase for Thanksgiving, we noticed there were several deep gouges on the underside of the surface. It did not affect any surface that would be used for cooking, so it wasn't worth a return. Having used it one time, however, some flaking and pitting occurred on the inside right in the center. The roasting pan does not come into contact with the stovetop, so chance of it being due to overheating just one spot is very unlikely. We were thinking that it might just be one time, but when we used it again our other section began to pit and flake as well. As a result, we were past the time when Amazon's return policy would take effect. I have contacted Cuisinart, but the company won't respond for several weeks, so we began the warranty process only to find that this product is not sold in Canada, so they cannot remedy the problem even though they admit that it appears to be a manufacturing defect. Can Amazon assist?.

This is my first try and I'm really disappointed

The results of this attempt have been disappointing, to be honest. A friend of mine gave me this A request was made specifically for this one by Mas. It was cheaper, but I decided to go with Cuisinart because I've always trusted them. However, I have used it twice, and both times it left permanent burn marks on the surface of my food as the searing process took place. A roasting tray is supposed to last quite a while, and at this rate I doubt that it will last much longer than a couple of I have already decided not to roast using my Cuisinart for the next time.

A flat base is not an option

Upon returning the original pan due to the bottom not being flat, Amazon was very quick to send out a new one. It will have to be returned because the replacement has a warped base, too. The pan is not centered. I'm not sure if this is a defect or how it is supposed to In order to prepare gravies and to deglaze, I need a flat bottom roaster. it has a warped base, there is a pooling of water The majority of people who post questions and answers say it should be flat, so I don't think it should warp. My guess is that it would be a great pan if it were flat.

Cuisinart can't seem to find a way to make roasting pans with a flat First, the pan was so badly warped it was unusable, and the replacement also had large gouges out of the inside, and it was Manufacturer defect. I did not have the option to replace after the first two, which I did not want to do Only a refund will be granted.
