As far as I am aware, I have not used this pan for water bathing. My idea is to cover the entire hole pan instead of each cavity, which would be easier to do. I wanted to let you know that this pan was good, but the circles peeled upon first use.
There is a straight upward and downward motion. The top of the cupcake tin doesn't widen like on a cupcake tin.

They were the best mini cheesecakes I've ever had. The tin foil on the bottom had to be wrapped around the bottom of the pan in order to keep the pan in a water bath. However, the pan was easy to clean and make lovely.
My return will be to get a better pan, though the concept is great. Putting a batch of cheesecakes in the oven, metal flakes were all over it. Having been in charge of making large quantities for my son's graduation, I found this frustrating. This is not a good purchase. I find this quality terrible.
Although I was a little worried about the price, it was well worth, it. Despite the fact that I forgot to spray non-stick spray on them (I forgot), the mini cheesecakes turned out excellent. People who have made cheesecakes know that the leftover bits on the sides can be a pain to clean, especially once the cheesecake has dried. The cheesecakes were for a party the following day I didn't have a chance to clean it until the following day. I rinsed the pan under the water before wiping it clean with a dishcloth and it came off nearly completely. So that I can create more batches more quickly, I think I will order a second machine.
There are a number of reasons why I am not leaving a super review. Disks in the little I set stick together and scratch themselves horribly when washed. When it comes to cooking, these are outstanding! This recipe would be perfect for brownies, cheesecakes, mini apple pies, breakfast quiches, and apple roses. WARNING This is a dangerous situation. PLEASE DO NOT, and I mean TOTALLY DO NOT grab these inside the cut-out area. After the first baked items, one or two of the disks were missing from the pan and some of the coating started to peel off.
According to my rating, this is between three and four on the scale. In preparation for an open house, I purchased four of these. On the whole, they did a good job. About 24 cheesecakes can be made from half of a regular recipe. The bottoms can easily be removed when the bottoms are loose. It is also best to brush the sides of the mini bars with melted butter or shortening, as some of them had a bit of a metallic taste. They removed pretty easily by pushing from the bottom though some looked a little raggedy on the sides after chilling overnight. I ran a thin knife around the edges (be careful not to scrape the metal as it can flake a little bit). In addition to sending extra bottoms, they also send inductors, which is helpful since they are easily tangled if more than one gets stuck together Rubs failed to separate the disks from one another, so I had to rub them in different directions. Overall, they did a pretty good job. There is only one thing I wish was different they were made in the USA instead of in.
This product is very easy to use, and it doesn't seem to cause any problems Stick to it! cheesecakes that did not stick to the pan or to each other. It is so convenient to make more at once that I have ordered a second pan.
