Questions & Answers

This got washed in the dishwasher by accident. Things have started to stick together. Is it possible to restore it with some oil or beeswax seasoning?

Instead of beeswax, I'd use oil and bake them for 10 minutes at 200°F, then wipe them clean. In fact, I have six of these pans that I use in my small home bakery, and I've discovered that cleaning them with a soft bar towel rather than washing them works best. I wash them all with a very mild detergent after four or five uses, then re-use them. oil them. Another tip is to butter the pans the night before you plan to use them, then place them in the freezer. Remove them only when the batter is ready to be added. This keeps the butter cool enough to stay along the edges of the pan and prevents the batter from sticking, plus it caramelizes beautifully. I probably told you more than you wanted to know, but I adore these pans and sell canneles as quickly as I can make them. Good luck with your meal!

Browns Canelés in a fantastic heavy weight! Last spring, I came across a recipe for Canele in Bake magazine, and it piqued my interest because I had never had one before
5/5

I've been looking at copper canele molds after reading articles stating that copper is the only material that should be used. I was completely enthralled by something I'd never tried before. Let me tell you, those copper molds were on my wish list. It didn't seem to matter that the molds were over $200 each. They were a must-have for me. Didn't I say I was a bit of a nut? I was hesitant due to the cost, but then I came across this pan. My compromise was to try them in this pan and then purchase the copper molds if they turned out well. This pan is fantastic. br>br> It has a lot of weight to it. The Canelés turned a beautiful dark brown on the outside but were magically custardy on the inside, and they were delicious. Before filling the pan, it's suggested that you freeze it. Individual molds are much more difficult to work with than a single pan. Every 15 minutes, the oven is supposed to be turned. Once again, having only one pan makes things easier. The Canelés are a slice of heaven on earth. 3 or 4 bites is about right. They're meant to be tiny. They were described as "the real deal" by a friend who spent a lot of time in France. Some may argue that they would look better if they were made out of copper. I can't think of a way to do it. Let me tell you something. I'm going to order a second pan so I can make 24 at once when the family comes over. It comes highly recommended.

It really works
5/5

I recently purchased a second one. I purchased one of these last week and was very pleased with the results, so I purchased another. The two center molds had light butts, but they were fine; after making several test batches, I discovered that removing the sheet pan allowed the hot air to reach the middle ones more effectively, and they all turned out beautifully. Also, leave room for expansion by not filling to the top. Overfilling is one of the causes of "white butts. " I brushed the pans with a 50/50 mixture of beeswax and butter, and I didn't have to chill them: When it comes into contact with room temperature, it solidifies. I poured the chilled batter right into the pan. I couldn't be more pleased! What a fantastic item!.

China is the source of this product
3/5

Putting a premium on items that are labeled "made in Italy. " They're made in China and tinned in Italy, according to the packaging. If it's made in China, it's not worth $117 when French-made ones cost the same!! Make sure you're not deceiving your clients. Simply provide a detailed description of the situation. On Amazon, the same quality, which is accurately described as made in China, costs $20.

Silicone or copper aren't as good as this
5/5

After three months of experimenting with single molds, copper molds, and silicone pans, I've come to the conclusion that this pan is nearly perfect. Well-built, simple to operate, excellent heat conduction, and simple to clean. I make the most beautiful and delicious canneles this side of France by preparing the molds with softened butter. I've tweaked a few recipes until I've found one that perfectly fills this 12-cup mold. If anyone requests it, I will gladly provide the recipe.

Unlike the individual copper molds, I am very happy with this canele pan! The copper molds were a disaster when I used them to bake caneles! (For more information on the copper molds, please see my Amazon review
5/5

) ) As a result, I ordered this tray, which was excellent. It has a lot of sturdiness to it. Softened (not melted) butter was used to completely butter the interior of the molds as well as the top of the pan around the mold openings. The pan was then chilled to ensure the butter had hardened. After that, pour in the batter that has been resting and bake as usual. After baking, the caneles came out without a hitch. It was also a breeze to clean up. br>br>One thing I'll say is this: The six caneles in the middle of the pan did not get as dark as the three molds on either end. So, after about 45 minutes of baking, I took out the caneles from each end of the pan and baked the remaining 6 interior caneles for another 15 minutes. I'm sure recipes differ, but mine says to bake at 500°F for 15 minutes (which I did) and then at 375°F for 60 minutes. So after the initial burst at 500, I did 45 minutes of "end" caneles and 60 minutes of "interior" caneles at 375 for the entire pan of 12.

Yes, it is made in China, but it is a good product
5/5

First, the bad (despite the fact that I gave 5 stars): the package did not arrive sealed, and I believe it had been opened, revealing what was inside; I guess I was lucky no one took it. The Pros: br>br>The Pros: br>br>The Pros: br>b My wife had sampled a cannele at work and was given the recipe, but the results were disappointing because we lacked the proper mold. br>I decided to purchase this mold because the French copper molds are so expensive, and I also purchased Beeswax. That was the difficult part; it's amazing that beeswax is so hard to come by. I looked on Amazon as well, but the quantities were excessive, e. g. Even after typing in "food grade beeswax," all that comes up is for candle making and cosmetic applications, and nowhere does it say that it is safe to eat. br>All right, let's get back to the topic at hand. br>I made the Canneles myself, and they turned out fantastically. Tastes good, is soft in the middle, crisp on the outside, and has a nice color. Unlike the one my wife made in a muffin mold, they also came out easily from the mold; however, she didn't use beeswax because we didn't have any at the time, and I was concerned about cleaning, but it was a breeze. br>I try not to put any of my baking tools in the dishwasher. I do use it for dinner plates and other china, but it fades quickly after a few years. br>I thought it was a good deal compared to the copper molds, which would cost a small fortune to replace and require a lot of upkeep. If I were selling the canneles, that would be fine. br>BTW, I'm French, and my family and I went to Bordeaux a few years ago. The canneles are everywhere, and they're delicious.

Fabulous! This pan is fantastic

The Caneles are easy to remove from the pan. I've tried other molds, but this one is the best; the batter browns beautifully and comes out perfectly formed.

It's a fantastic product that's well worth the money I paid for it
5/5

I was only able to upload one video, but this is a fantastic product! It uses less than one box of mix, so have something else on hand, and it's very sturdy with no warping pans. This is something I would strongly recommend, and I intend to purchase more. I have the roasting pan as well, and everything cleans up nicely. I did coat the pan with a coating before pouring in the batter, but I don't think it was necessary. br>This will get a lot of use and will last a long time!.
