The thing I care about is how it reduces, sauces, simmers, soups and sauces to the right consistency, and that's People don't realize that real chicken stock smells like hell on water because chicken or turkey bones really stink. This is why I never make my own and instead, I buy chicken stock from the supermarket and keep it I don't think people are making real chicken with bone stock since you have to scrape off the skim, and it takes hours to make. Making my stock takes weeks now. I don't have the time to make stock sometimes it takes a year to make a stock.

There is something very tasty about this Along with adding it to a wide variety of recipes that call for liquid, I use it as liquid for all of my soups instead of Making this is one of the reasons why I make a great Cream of Carrot Soup. Several of our widowed senior neighbors that I share soup with enjoy it and, as does my husband. In the summer, I shred zucchini from our garden and freeze it in freezer bags. After cooking these, I let them simmer until the carrots are fork-tender. As I mash the carrots with a potato masher and then pulverize them with my immersion blender, I run it through emmustion blender until I have pulverized the carrots To the mashed potatoes, I add about 2 cups of left over mashed potatoes and combine well. To finish, I add a little freshly cracked black pepper, about 1 Tsp of dried Thyme, and about 1 to 1 1/2 cups of half and half. There is already enough salt in the stock and the soup base that you don't have to add any more. In general, I try to buy the low sodium variety of this chicken stock, but it can be hard to find in some stores.
