This serves as a koji starter for me. It performs admirably. I used about 50 grams of Miyako koji to make 1 kg of koji rice, which I then used to make shio koji and amazake (each requiring 200 grams of koji rice). It's a lot of work, but it saves money because you don't have to Miyako koji as often. When I run out of Miyako koji and need to make a new batch of koji rice, I will still purchase it because I know I will always get good molds.
Although it is not a traditional use, a cheap steak cut with this and left in the refrigerator for two days produces a poor man's dry aged steak. In the photos, I ground up the rice and used it to coat a top sirloin. Ascertain that there is adequate airflow! Possibly more tender, but unquestionably tastier, with the classic dry aged rich nutty flavor. br>Excellent product.
Here's a solution for those who want to make koji products but don't want to go through the trouble of making their own koji rice. Pre- Koji rice imported directly from Japan. The color is always a nice bright white. Miso, soy sauce, and even sake can be used to make a variety of traditional Japanese dishes.
