Growing KOJI KIN on grains like rice, wheat, and soybeans produces KOJI. It's been used in traditional Japanese foods like miso, soy sauce, sake, sweet sake, and pickles for a long time.
MIYAKOKOJI is a type of KOJI that is dry. It is dried at low temperatures in order to preserve the KOJI characteristics for as long as possible.
Miso and Shio Koji can both be made at home. Miso soup and miso sauce can both be made with the miso. Meat and fish become soft and delicious with the addition of salt and pepper.
The intestines and blood are said to be cleansed by KOJI. Furthermore, it is said that eating dry KOJI with 1 teaspoon of water (cold or hot) afterward is beneficial to one's health.

This serves as a koji starter for me. It performs admirably. I used about 50 grams of Miyako koji to make 1 kg of koji rice, which I then used to make shio koji and amazake (each requiring 200 grams of koji rice). It's a lot of work, but it saves money because you don't have to Miyako koji as often. When I run out of Miyako koji and need to make a new batch of koji rice, I will still purchase it because I know I will always get good molds.

For dry-aged steak shortcuts, this is a good option

Although it is not a traditional use, a cheap steak cut with this and left in the refrigerator for two days produces a poor man's dry aged steak. In the photos, I ground up the rice and used it to coat a top sirloin. Ascertain that there is adequate airflow! Possibly more tender, but unquestionably tastier, with the classic dry aged rich nutty flavor. br>Excellent product.

Here's a solution for those who want to make koji products but don't want to go through the trouble of making their own koji rice. Pre- Koji rice imported directly from Japan. The color is always a nice bright white. Miso, soy sauce, and even sake can be used to make a variety of traditional Japanese dishes.
