Herbs de Provence, like curry, is a combination of spices that originated in and around the Provence region of France. The first time I saw this Netflix was at a BBQ competition show. Someone used this exact spice for the pork spareribs, and the judges said they were the best tasting ribs they'd ever had. They asked what the spice was, and she showed them your Herbs de Provence Blend, which stunned and amazed them.
Although the blend is complete, it is reasonably priced. There are a lot of great spices in here, as well as all the traditional spices. They have all of the essentials, and then they add a few extras that most suppliers are hit or miss on. Excellent in a variety of recipes (especially chili).
It doesn't sit well with me. The mixture contains a significant amount of fennel seeds. I've never had fennel seeds in a brand of herbs de provence before, and they don't taste very good. We simply discarded it. Unless you like the overpowering flavor of fennel seed, buy a better brand like Straight From France if you like herbs de provence.

"This makes me question the authenticity of the blend. " No rosemary, but plenty of fennel seeds, according to my observations. I won't be buying anything else.
This spice blend contains far too much fennel.
Because these large hard seeds do not soften in that amount of time, I like to use this type of mix to season vegetables and fish in the microwave. It is also fine for stews and soups that are cooked for long periods of time. I would purchase the McCormick brand, which I have previously purchased.
