Hi Doug. It could be one of three things if you can't get your egg whites to stiff peaks. Contamination from oil, fat, or detergent on the utensils, as well as contamination from the yolk that got into the whites while separating, can reduce the ability to form stiff peaks. Finally, never beat egg whites in a plastic bowl because some plastics attract fat molecules, which can leave a film on the inside of the bowl. I hope you found this information useful. ~Tina

I bought this for vertigo, but it didn't help. If you're making a lemon meringue pie, it's a great product, but it won't help with vertigo.
I didn't need it for fish fillet tartar, but I did need it for a cookie recipe, and I believe it's supposed to thicken things up. I'll file it away with the rest of my one-of-a-kind items. spices and additives are removed from the recipe.
