My experience with wild rice pancakes in a Canadian restaurant was good. I ate the best pancakes I have ever tasted. The way I understand it, it was cooked wild rice that was spread in the pan, and they heated the wild rice, then poured pancake batter over it. Try it! Prepare yourself for a pleasant surprise!
