If you scoop out what you want, then settle the rice in the bag and close it as tightly as possible, releasing as much air as possible while securing the opening by rolling the excess and storing rolled side down, or placing rolled rice into a ziplock bag, the rice will last at least a year. The starch and moisture content will vary depending on how long it has been since harvest, which is an unfortunate unknown. My recommendation is to choose a type and brand of rice that you enjoy, and to cook it according to the package directions. Change the amount of water in the recipe until it reaches the consistency you prefer, and stick to it.

Wow, this is incredible. This is the type of wild rice I used to eat as a kid. So delectable. There's nothing like the flavorless wild rice available at places like Trader Joe's. br>Sure, this wild rice is more expensive, but it's hand-harvested in the wild and dried over a wood fire, and did I mention the flavor is incredible? br>The extra cost was well worth it. Also, it arrived much sooner than expected.
The darker farmed wild rice and this one have a distinct flavor. The flavor is lighter and appears to be a little softer. Also, because it cooks much faster, adjust your cooking time accordingly. BINESHII's customer service is extremely responsive, and they quickly resolved an issue with an order.
Wild rice of excellent quality, highly recommended.
