After listening to a podcast by Malcolm Gladwell about how McDonalds fries were changing, I decided to buy this book. The same fries were fried in beef tallow in a deep fryer, and they were cooked in vegetable oil instead. However, I was able to achieve the opposite of the results reported in the podcast. In re-listening to the podcast, I realized the beef tallow used by McDonald's doesn't have any beefy flavor like the tallow was used by McDonald's. Crisco is basically what it tastes like.
