Low carb key lime cheesecake is one of the things I like to eat for dessert. For the lemon juice, I squeeze fresh limes, but the recipe also calls for zesting the limes and trimming the zest without cutting into the pith is a pain. Someone suggested lime oil as an alternative, so I ordered it. It has the same taste without all the work and you don't have to worry about taking the skin off your fingers. One drawback is that it does not impart a nice green color on the final product or add tiny flecks to make it look nicer. However, I'm willing to put up with that for the sake of my fingers. There is always food coloring available if you want to make something green. Using zest in place of lemon zest is a good idea. It blends much better.
