This bottle was split with my mom, and we both left it out on the counter since there was no notice that it had to be refrigerated on it. The original bottle I kept, and my mom put it in a container of her own. Then about a month later, my mom found mold in her container, but mine was still in good condition. In case it needs to be refrigerated, I kept it there after that. Since I ate it for a month, there haven't been any signs of mold, but it's stored in the refrigerator.

Amazon is not a good place to buy this. Before my Amazon purchase on Aug 28, 2018, I had purchased the same brand and flavor from a restaurant supply store and used it for almost a year without incident. We are in the month of September today. On the 22nd of last month, I noticed an odd flavor in the new Amazon item I bought. The "crystalized" green layer at the top almost made me sick to my stomach when I saw it. I had never encountered this problem with the other one I had bought. The warehouse seems pretty grim and I wish I could get my money back because I strongly suspect something happened to it. Due to the nature of this item, I am not able to return it and must toss it. In fact, I tried to attach a photo of the green layer, but the glass being so reflective made it hard.

There isn't much caramel flavor in this drink. There was a distinct chemical flavor in it, and I can't say that I would guess it was caramel without reading the label. It is true that Monin makes amazing sauces, but I think that they need to improve their.
