Steve, I agree with you. The smaller one is roughly half the size of the 19-inch one, in my opinion. The small one yields three dinners, while the large yields six.
Look good, it has a date somewhere, but it's hard to see on the bottom, but if it's three years old, I'd throw it away.
I wouldn't throw it away because I've had them for the same amount of time as you and they're fantastic. In fact, I'll be making paella on Tuesday with an old one.

This paella mix can be used to make a quick meal. It takes about 30 minutes to make on the stove, with only a few minutes of active time, and I like to add microwaved frozen peas and chopped imitation crab (surimi) to add more flavor and nutrients after it's cooked. I have a 14-year-old daughter who is my constant companion. In the fridge, an oz package of flaked imitation crab, such as Crab Classic, can stay fresh for several weeks if not opened. With one paella mix box, I use the entire package. When I forget to plan ahead for dinner, having these on hand is extremely helpful. There are approximately 6 servings in this recipe. The leftovers keep well in the refrigerator, but eat the canned mussels quickly because they go bad first; also, when simmering the paella, keep the heat low because the rice on the bottom of the pan can easily scorch.

These are excellent with what is included in the box. However, if you purchase a frozen pack of mixed seafood, you can prepare a delicious meal at home. It'll whet your appetite for seafood like a baseball bat! br>br>At the grocery store, I'll pick up tubes of garlic paste, cilantro paste, and tomato paste, as well as unsalted chicken cooking stock (yes, they sell it now). Instead of water, add 3 cups of cooking stock and a tablespoon of each of the three pastes, stirring thoroughly. Then I'll add baby octopus, squid, shelled clams, and raw shrimp that has been cleaned and deveined. When there are only 5 minutes left in the cooking time, I'll add some thawed shelled mussels, a little crab claw meat, and 3 tablespoons of large spanish caputo capers, as well as a few fresh littleneck clams on top of the rice and cover again. I'll remove the lid at the end and allow the rice to toast for 2 minutes. 3 minutes more for a crispy socarrat with a rich flavor from the paste seasonings on the bottom. It's absolutely incredible!.
As the liquid, I used a good dry white wine and chicken stock. I also added a cup of chopped fresh tomatoes, red onion, red bell pepper, chopped fresh turmeric root, Spanish safron, fresh parsley, sage, rosemary, thyme, basil, and some sprouts from my garden. In the oven, I finished my cooking. It ended up being the most delicious meal I'd had in months.
I was surprised to learn that this is a Paella kit that includes everything you need to make the dish. The clams from the can and the other ingredients were actually quite tasty. I've long been a fan of paella, and I'm aware that each Spanish-speaking country has its own version that is specific to its region. There are both better and worse versions made from scratch. It's in the middle, and the next time I make it, I'm going to add some fresh clams and other ingredients to kick it up a notch. Try it out and let us know what you think. Remember, if you prefer, you can use fresh ingredients instead of canned ones. A good place to start is with the base rice.
