We are very satisfied with the quality of Eden organic beans. The beans are preservative free and low in sodium (less than 100 mg per can), so the flavor of the beans comes through very well. The one complaint I have about Eden pinto beans is that they have a tendency to chelate (leach protein from) their flesh. Due to this, they adhere to the walls of the can, and one must force them out with a spoon, knife, fork, or other cutting tool. In the end, many of the beans get mashed, which is not ideal if you want to boil them or cook them, although it would be a quicker way to make a vegan red bean soup I'm eating fried beans for lunch.
