There are no hog salivary glands in the ingredients list! It's all pretty good

Chorizo is used mostly as a flavor enhancer (migas, queso flameado), rather than being served as a stand-alone sausage like bratwurst; however, it tastes great as a flavor enhancer and has no cholesterol. This is a wonderful meat substitute. Salivary glands are also used to make pork chorizo. That alone makes me want to go to a soy restaurant.
