As far as ginger ale goes, I haven't tried it with this yeast. If you are trying to make a non-alcoholic soda this probably won't work for you. Nevertheless, this is one of my favorite yeasts for hard cider making, it has a bit of a grainy flavor after fermenting, it may not be perfect for ginger ale, but I recommend it for hard cider.

After following the directions to the letter, activated the yeast. It seemed that the yeast had not activated in the wort so I ran a new batch and decided to prime the yeast before pitching it in the same temperature as the wort. After several days, the hydrometer showed no changes. I reverted back to another yeast I had on hand and it worked fine. Used this yeast before with no issues, so I must have been missing the packet.

While I am uninformed about other yeasts, my friend and I have been using this yeast to make two gallons of ale with just some Briess golden light malt extract. We will continue to abuse this yeast and to see how much we can abuse it yet still have.
