Yes, the casings are suitable for the preparation of mortadella. I've cooked a variety of sausages to 160 degrees Fahrenheit. It came out beautifully.
It is something I have never done. It's worth a shot on a one-pound batch (i.e. Use only a portion of a casing for the experiment). I believe it may have issues because there are small vent holes in the casing (which are difficult to see) that could allow water to enter and cause damage. I have an electric smoker that allows me to set a very low temperature (like 100 F) for a few hours, allowing the outside skin to firm up and hold its shape. Then I finish it off by raising the temperature to around 225 degrees Fahrenheit. I'd like to know if boiling the shape would change it.

We would have given it five stars if the crimper hadn't broken the first time we used it while we were trying to finish our summer sausage. We had to look for string to tie it, which detracted from the product's ease of use.
We made venison summer sausage for the first time this year. I had to go back to the page to figure out how to prepare the casings before stuffing them, but the instructions were all there. We had a great first experience with this product because it was of such high quality.
This was fantastic. It was simple to stuff, and the ties all stayed put. I had no idea they were that long, but it's clearly stated, and I overlooked it. I would purchase this item again.
It's great, but the clamp is difficult to work with. I eventually settled on pliers, then switched to butcher's strings.
Exactly as stated. Material that is durable but not overly so. It is a good smoker. The hog ring pliers are a tad on the small side, but they're more of a bonus for the price of the kit. For my 30" Master, the casings are too long. built-in smoker, but cutting to length is a breeze.
I can't use ring pliers because they're too small for my hands.
Nice package; the hog ring pliers could have been a little better quality, but they did the job nicely.
