This brand I like very much, but one day I noticed it has gellan gum included for clump-free packaging. You spend a lot of money purchasing organic pastured cream, but how can you then expect them to add manufactured ingredients I guess that means it won't have any effect, right?). Also keep in mind that aspartame received FDA approval, as well as a bunch of other crap. No way am I going to take that risk. For those of you who don't want any organic cream, you should try Clover Stornetta organic cream. The cream they make isn't mixed with anything else but That should be safe (and Paleo) to eat.
Gum can be found in Organic Valley brand products. Chemists may understand why the first half of the whipped cream volume is fine, but as it gets concentrated in the second half, it just sticks like cream Jello in the canister.
