Product Description

5 lb. This is the recommended amount for a 50 pound bag of high temperature cheddar cheese. Use the same High Temperature Cheese used by commercial meat processors. Ornua Ingredients North America is located in Hilbert, Wisconsin, which is known for its cheese.
Orders for cheese must be placed by noon (CST) on Monday. thru Sat. will be shipped the same day via USPS Priority Mail, with a normal delivery time of 2 to 3 days. If you order three or more five pound bags, you will receive a discount. If you order two bags, your order will be split into two boxes and shipped separately. Please keep an eye on your mail delivery and put the cheese in the fridge as soon as it arrives. It's possible that the cheese will arrive at room temperature, but it'll be fine if it's refrigerated right away.
Hi Temp Cheese can be kept in the refrigerator for 2 to 3 months or frozen for up to 6 months. (NOTE: Do not thaw and then re-freeze the cheese if it has been frozen.) Allow to defrost in the refrigerator for 24 hours before using if frozen). The cheese is made to withstand high smoking and cooking temperatures (up to 400 degrees F) without melting, while also maintaining its original 1/4 inch cubed shape after stuffing, smoking, and cooking.
Our High Temperature Cheese is shipped in a 3 mL vacuum bag. The bag is then placed inside a 6 oz. Ecofoil Thermal Bubble Mailer. For maximum freshness, place Polar Tech Ice-Brix in the refrigerator as soon as possible. The thermal bags are then delivered to you in a Priority Mail Box by the United States Postal Service. (When the ice pack(s) is delivered, it WILL be melted.) This was to be expected.
1 pound of High Temperature Cheese to 1 pound of Sausage Meat is the recommended ratio. for every 10 lbs. of high-temperature cheese a Pound of Meat - Each of our 5 lb. 5 lbs. of High Temperature Cheese should be combined with the bags of High Temperature Cheese. Following your FINAL grind, you should have a good amount of meat.

The product is good, but the shipping is terrible

The product is fantastic in and of itself. I only gave it three stars because of the shipping. It's great for summer sausage, snack sticks, and other similar items. It will take a week to arrive, regardless of when I place my order (weekday, time of day). The "fake ice block" they include in the box has thawed out by the time it arrives. It shouldn't take more than a week for me to get here because I live in Arizona. Shipping, especially for a perishable product, needs to be done much better.

Because it's too expensive, I'll go with regular cheese additive, which has no outstanding flavor and doesn't melt very well unless the sausage is heated to a high temperature

I made smoked venison jerky with this cheese. It was sturdy and delicious, with no gritty aftertaste. I saved what I didn't use and put it in the freezer. I'm crossing my fingers that it'll still be good.
