Cabot's is an expert in the field of cheddar. Seriously Sharp is sharper than Extra Sharp, for those who are curious (as I was). Seriously Sharp was dubbed "Hunter's" by Cabot in the past. I was curious as to what had happened to that name. It's probably humiliating for the anti-abortion campaigners. People are being hunted.

To me, it has a sharp flavor, but not overly so. br>br>Recent changes: br>br> I opened the second one after two days in the fridge and discovered the cheese was wet. The package had been completely sealed. The cheese must have some moisture in it. If you don't want it to mold, make sure it's cold enough in the fridge or eat it right away.
I bought two packages, and both of them had a small tear in the same spot that looked like it was caused by the manufacturing process. Both became moldy in my fridge after only a few days, despite the fact that cheese usually lasts a long time; I do not recommend this brand.

They were suddenly discontinued in favor of a generic brand that I would not pay the price for if I didn't know what I was getting. For years, Cabot has been my favorite cheese. br>I'm a little disappointed that the 8 oz size is the only one I can find, but it's the same cheese I use for everything else.

This is something I purchase because it is inexpensive. Although a good strong / sharp cheddar should not melt well, it has a good melting consistency. br>br>This isn't particularly sharp in any way, but it tastes fine.
