The weather has been really bad in the Midwest where I live this time of year, so I was craving rum cake. Taking me back to a sunny beach in Mexico or the islands would be the perfect treat. You can definitely say that this cake is on the octane scale. Not only was this cake drenched in delicious rum before baking, but it was also soaked in rum after being done! To get rid of it, I had to swat it away from my five-year-old It was she who became belligerent after taking a bite of old's hands! There's no way she can resist her rum cake (rum). Though I do mean that seriously. It was a joy to share this cake with family and friends. You should proceed with caution, however, if you are sensitive to alcohol. You'll love the kick it's got!.
