My shoes have not stretched out at all, though I wear an 8 and the 8s are accurate. Eight is a good number. I wouldn't have fit into 5 since it would have been too big. As long as you stick with the size 7, you should be able to cause them a bit of give with a little pressure. A shoe repair shop can stretch them a bit if you want. It is likely that you will find an 8 to be too large.
Sizing up is definitely a good idea. A size 8 is my usual size An 8 (38) was too tight for my feet and I could see them poking out of the top of the sandal when I tried it on. This 39/9 looked good on me, so I ordered it from Amazon.
