In short, yes. There is a 3 phase system in this example and the CU stands for copper.

It can be converted into a main breaker fairly easily, can't it? Would you be able to do so with any notable changes? As for the main breaker, what should be used?

Using it as a breaker box would lose you 3 spaces, but you could use it as a main switchboard. To connect the feedwire, you need to run it through the lugs of a 60amp 3ph (or smaller) breaker. Load the rest of the spaces from the other 9 spaces

Is it possible to find a 100 amp beaker that fits this panel online?

Depending on the AIC (interrupting) rating required, the part# would come out to be different.
