What are the advantages and disadvantages of these versus a single leg support stilt?

The double leg support is probably a good idea, but the calf support isn't adjustable up or down, so it's unclear how useful it is.

Are these appropriate for someone who stands at 5 feet tall?

If the distance between the sole of your foot and just below your knee is 17", you're in good shape. These will fit if you are 19" tall. The leg brace should not be worn on your knee or too low on your calf.

The tall man is not one of them

The stilts are perfectly acceptable. The leg straps are too low on my calf muscle because I'm 6'8". The leg supports aren't adjustable; instead, they're fixed in place.
