I'd never seen a sharp oyster knife before, but after using it, I'm in love! They come with gloves to protect your hands. If you fall, make sure you have those with you. br>I discovered that the sharp blade splits the hinge joint far more easily than the dull version. The muscle that holds the shells together is then easily sliced by it. br>I've been shucking oysters for 50 years and it usually takes between 1 and 2 minutes. 1/12 of a minute for each oyster It takes me 30 - 40 minutes to cut something with this knife. Although the blade is a little thick, it functions perfectly. We were able to shuck 36 in a matter of minutes. The included free knife gloves are a little on the small side, but they do the job. They were never used by us. br>The price is well worth it.
