This is the paper I use to wrap all of my bulk meat purchases. Yes, one side of the paper is coated. The coated side has a sheen and a smoother texture, making it easy to distinguish between the two sides. It has done a fantastic job of preventing freezer burn on meats.
Prior to heat sealing, you should contact the supplier. I'm not sure it'll work. There is no mention of dealing with heat in the suppers' specifications.

This paper, combined with a roll holder, makes quick work of wrapping roasts, loins, and other cuts for freezing. With a good tight wrap and tape, your meat is ready to go.

As with most decent freezer paper, the paper has a shiny coated side and a dull side. It does not include a cutting edge, however. It's just a big roll of paper that you'll have to roll off and cut for yourself. The only disadvantage is that it would be difficult to attach any kind of cutting edge to a box and roll that heavy.
I know I'm supposed to use craft paper with my weaving loom, but this was a lot less expensive and you get a lot more for your money. It's the ideal width for my 15" loom, and it maintains warp tension just as well, if not better, than the original. This is something I'm going to buy again.
