Will this fit in a set of 11 inch gap wheels? Is 11 inches the width of the tray?

The depth of the cart, including the wheels, is 11". The depth will vary depending on which way the wheels swivel. If the cart does not need to be moved, the wheels can be removed to fit the gap.

The width dimension is eleven inches, according to the description. Although one of the photos indicates a width of 2 inches, another photo indicates a width of 15 inches. 2 inches. Which option is the most appropriate?

Consider 11" to be the depth from front to back. Although there isn't much agreement on whether the 15" refers to length or width, the photo is definitely a hint!

Is it possible to place the microwave on top of the refrigerator?

It's not where I'd put my microwave. It isn't particularly durable. Mine wobbles a little and is fairly light, despite the fact that it is on wheels. Mine holds a few books and office supplies for me.

First and foremost, it is small and appears to be designed for children. I expected it to be inexpensive because I only needed a small item to get settled in my new place. The height difference between a counter and a kitchen cart is displayed. Although it is not particularly sturdy, it does have wheels. I'd advise against putting anything in the shelf baskets because it will undoubtedly fall over.

As expected, it provides additional storage for a small kitchen

This isn't the most durable kitchen island, but I didn't expect it to be for the price and quality of construction. I was simply looking for additional storage space. Dry goods/odds and ends can be easily stored in this container. I also bought it to use as a stand for my small Keurig and Vitamix blender to free up counter space, and it works perfectly.
