I'm a professional, and we use it on a regular basis; it's sturdy and reliable. If the movement isn't firm, you've purchased a cheap one, and it won't expand evenly, resulting in inconsistent sizes, but not with this one! You can get a lot of mileage out of this product if you wash it by hand.
The Ateco 12 Wheel Stainless Steel Cutter, 2 1/8 Inch is the best pastry cutter I've ever had. Because one reviewer claimed he got a cheap copy, I almost didn't buy it. I'm not sure how that could happen. Why would he leave a negative review when he received his money back? Pasta, crackers, cookies, and small dinner rolls have all been made with mine. The cutter is made of solid stainless steel and is extremely well constructed. It's very simple to work with. It produces uniform cuts on everything I cut with it. I've never been able to cut straight lines before, but this makes it easy and saves time. I won't put it in the dishwasher because the directions say not to, presumably because it will lose its ability to open and close evenly, especially if you have hard water. I can see this going on for a long time. For such a high-quality item, the cost is well worth it.
You can cut your own lattice if you want, but this method gives you nice, uniform strips that are cut all at once. I don't think it helps much because you still have to open it, adjust the width, and lock the mechanism in place, not to mention clean it up. None of this takes long, but you could probably cut and clean it up just as quickly with a knife. You should buy this because a) it's cool, b) you want really nice, even strips, and possibly c) you're planning on making more than one lattice crust at the same time; the more you cut, the more efficient this tool is in terms of your time; unfortunately, I usually only make one lattice crust and several other kinds of crusts when baking during the holidays, so while it's nice, it may not be the most efficient use of my time. br>b Recommended for those who prefer perfectly even strips and may be working on multiple lattice crusts at once.
I was always trying to figure out how to cut my bar cookies evenly, and I even measured the length and width with a ruler. But, alas, they were always uneven. Some are excessively small, while others are excessively large. Because the cutter's wheels are shallow, I use it as a guide to mark my bars and then cut them with a pizza cutter.
The best all-purpose tool a baker can get. It can be used to cut fondant, pie dough, and puff pastry dough. It survived the dishwasher's high-heat cycle with flying colors. Even when I dropped it by accident, no damage occurred! It was well worth the money!.
The one before it was erratic, flimsy, and even bendable. br>Just by looking at the weight of the box, you can tell how sturdy it is right away. You're not going to be able to bend this one. The locking screw is much better than the previous one in terms of ease of use and convenient placement. You get what you pay for, and despite the fact that it cost twice as much as the previous one, it was well worth the money. This is the pastry cutter to get, and I strongly advise you to do so.
Things like that are far too heavy to pick up. This device is extremely useful. I use it to make linguine, biscuits with zero waste cutting, popovers, egg rolls, and anything else that requires rectangular or square shapes in large quantities. They'll be popped out with this device. Oh, and shortbread cookies made from lasagna noodles.
