There is nothing better I have bought since buying my Kitchenaid mixer than the Professional 5 series and I'll tell you, this is hands down the best mixer I've ever had. The only thing better than home made pasta is homemade My biggest problem was finding the right dough. It took me a few batches before I found one that came together every time without any problems. I agree, yes. These sheets can be used for making ravioli, lasagna, tagliatelle, and tortellini whether you are using a ravioli tray or you are doing it by yourself. There are 8 thickening settings, so you should be able to find one that satisfies you. In my opinion, the best ravioli is found at #2. It is thin enough to cook in a timely fashion as well as thick enough not to break. There are cutters included for linguini and spaghetti with the set. While there was definitely a learning curve to getting the best results, the process of getting the dough to the correct thickness and then cutting it into spaghetti noodles turned out pretty well. I fully expect the fettuccine cutter to function perfectly as well, but we haven't tested it yet. In the end, we let the crumbs that accumulated inside the rollers (there weren't many in the first place) dry for a bit, brushed out everything with the included brush, and then put all the pieces back together.
