A stiff dough is made by following the recipe on the package. To get it to come together, I had to add a lot more water. In several YouTube videos on how to make spaetzle, I saw that the dough should have the consistency of thick pancake batter and be loose enough to fall off of a spoon easily. Recipes might call for letting the dough rest for 10 minutes or longer so that the flour will be hydrated. There was also a significant increase in dough stiffness and a dense dumpling outcome.

I was worried about my safety during the incident. I was able to make spaetzle with it. A pan of boiling water is big enough to fit it across. After doing the spaetle, the plastic handle came off and I plunged home into boiling water with my hand and spaetle piece. The dress for $25 has been ordered since I have recovered. There is a container that fits like a lid on different size pans for $10.00. I have not received my copy, so can't provide a review.

Because I am a cheapskate, I have tried every hack imaginable for making spatzel without one of these, and everything I have tried is a mess, takes forever, and is just plain frustrating. It wasn't until I bought it that I realized how much I missed out. All of this is made much easier with this tool. It will take 5 minutes instead of 30 and no mess will be made. It is also great that it attaches to the side of the pot so that it won't go flying away. As a side dish to some kielbasa, I made a mushroom and shallot spatzel.
Why did I wait so long? Spätzle is one of my favorite dishes and I have enjoyed it several times while visiting Leavenworth, WA. The town is set up like a Bavarian village and quite fun. Don't do it. Avoid it at all costs. An older Norpro-style spaetzle maker was replaced by this new Norpro model Replacement was necessary since the handle no longer fit snuggly in the guides and was becoming a true safety hazard to use. The second time I ordered it, I resisted my better judgment. As part of the preparations for a party, I made several batches of spaetzle tonight. With the third batch, the handle was out of place, and with the sixth and final batch, I had to rubber band the white plastic handle to the metal grate. My hands were oily after cooking, so I tried to slide the handle back into the grooves and store it. It will no longer fit tightly to the metal since the plastic has shrunk away from it by now. Six batches of this project should have not been enough. There was never a dishwasher at all in that house. It seems that the plastic is so cheap that it shrinks from simply sitting near hot water for a few minutes while the batter is prepared Two hours spent with my "new" spaetzle maker certainly did not disappoint.
