On what types of oysters can I use this?

Any oyster will do. However, if you're dealing with really large oysters, you'll want to invest in an oyster knife with a longer blade.

When I placed an order, why was a cheap one-off knock-off from China shipped?

I'm not sure why it came from China (probably because of the price), but I'm pretty sure mine came from the United States. br>It's essentially a curved blade made of plastic. Mine is fine, and if yours isn't, you can try returning it.

What is the material of the handle? Is it more of a soft rubber texture or a hard plastic?

Plastic that is very hard. It's a solid piece of furniture. The blade is a thick, strong metal that runs the length of the handle, I believe. The tool has no wiggle or looseness to it.

Bertha was a bare-bones knife that didn't look like much but did the job. To me, she meant everything. After that, I met my future wife, and my shucking career came to an end. Bertha and I parted ways, but I never forgot about her. Fast forward many years and three children later, and Bertha and I are still in touch. We stopped going to oyster bars to save money and decided to eat at home instead. I was overjoyed at the prospect of being able to shuck once more! But without Bertha I was nothing until I found this knife. Eddie is certainly worth more than I paid. He is rugged, true to the feel and can part 99% of the% Eddie is still awesome, despite the fact that I could probably shuck an oyster with dental floss.

It was easily up to the task. This shucker knife is one of my favorites, and I'm happy to report that it's made in the United States. I'd like to see Amazon distinguish between products made in the United States and those made elsewhere in the world. This is an excellent oyster knife; after breaking several from the grocery store, I read reviews and chose this one. It's a huge improvement over the non-curved versions. Putting the oysters in the freezer for about ten minutes before opening them can also help. They don't put up nearly as much of a fight for survival, and they're a lot easier to shuck.

Even in commercial use, this is an expensive item that should last a lifetime. As a professional chef, I've been using these for years and have yet to break one, even in the toughest oyster shell. It's dishwasher safe and can withstand any abuse. You've found it.

Shucker of Oysters at the moment

I work in an oyster bar, and the company purchases these knives, which we then purchase from our boss. Anyway, I was in need of a new knife and discovered that they were available on this site! Great quality, and it effortlessly opens oysters (if you know how to open them). These knives are used to shuck oysters in Louisiana and Texas. If you're shucking oysters with a more delicate shell, use a thin pointed knife (like a clam knife) to prevent the shell from shattering (I learned this the hard way with West Virginia oysters). I work about 25 hours per week and eat about 2000 oysters per week, and this knife hasn't dulled in three months.

Dexter- Russell Oyster Knives are good tools, but New Haven is sometimes preferable (although Boston is fine as well)

There are two Ds in my house. R oyster knives, including a thicker, blunter Boston model and a thinner, flatter, tip-curved New Haven model. Both of these instruments are excellent. I usually shuck with both of them out and switch back and forth. I'll use the thicker Boston and its strong leverage for some oysters where the hinge is less complicated. This New Haven style blade enters the hinge and starts the lever and pop better for others that are flatter and have a curved hinge (Malpeques or Moon Shoals, for example). You can't go wrong with either knife, but this one is definitely easier to use with some shells. BUY CUT RESISTANT GLOVES AS WELL! I adore your tendons and palms.

Five minutes is all it takes for me to shuck a dozen oysters. 12 sec. With this baby, it all depends on the oyster, my mood, and the moon's position. I'm sure there are two or three other great shuckers who can compare, but this one seems to me to be about perfect.

This is an excellent tool. I was about to buy a cheaper one when I remembered how much of a pain a slick handle and flimsy blade could be. I hadn't shucked an oyster in at least 5 years, and after taking my time with the first dozen, the next dozen flew by. The blade was flawless, and the handle never lost grip or became tiring to hold, even when chipping shell out of the way.
