BTW- I was already aware that juniper contains natural oils, but I took it a step further. I wrapped it in plastic wrap and set it aside overnight after applying a generous coat of MINERAL oil. After that, I took it out of the wrap and wiped away the excess oil to reveal the wood's lovely grain and texture. In addition to the wood's natural qualities, it now has an extra "layer" of protection as well as a deep, rich color.
However, while this knife is beautiful and a work of art, it also has a flaw. I had to put it away because I couldn't use it any longer. br>br>Unfortunately, after a few months of daily use, it absorbed the oils and milk proteins from the butter, resulting in the unavoidable odor of rancidity. br>br>Even with regular washing, the porous wood quality of the juniper does not overrule the juniper, so oils seep in that can't be completely washed out, and they spoil over time, resulting in an off-odor. a pungent odor that is off-putting putting it to good use in the kitchen br>br>It's a pity, because this is a work of art.
