Perhaps my second favorite (at least my second most used) knife in the kitchen is this one. In the event that I could only have one knife, it would be my full-sized cook's knife. However, I probably reach for this knife the most, especially when it comes to smaller, more common tasks. (This knife would be especially good for cutting baguettes, making sandwiches, and doing light prep work. ) The blade is made of stamped steel as the rest of Wusthof's Gourmet line. It combines a wonderful combination of flexibility and rigidity that makes it very useful. Wusthof Gourmet knives perform better than forged knives if you fillet, pocket, or butterfly a lot. If you tend to do so much, I'd rather use a Wusthof Gourmet knife than a Wusthof forged knife. There are thicker, stamped Gourmet blades that tend to be more flexible, but I mostly prefer the thinner, stamped ones. There are serrations on the right, or correct, side of the knife (if you're right handed, As you cut through, the serrations on the right side cause the cut piece to be pushed away from the larger part. There are so many manufacturers who put their serrations on the left side of the knife. It is a subtle but crucial difference. In the event that the serrations are on the wrong side of the blade, you will find that the blade tends to pull towards you and gets A thin knife's tang is a full length, but its depth is not full. This leads to ugly cuts. This is not a case of the tang having been pared down to reduce weight or change its There are only half as many grooves on the tang as there are on the handle. When it comes to actual use, it doesn't matter very If you're a stickler for aesthetics, or if you hold onto the snobby notion of a full-tang set, this knife probably won't fit in. As Wusthof (and none of the other major makers) don't make any knife in this size with a rounded tip, full tang, and serrated blade, I am happy to compromise slightly on that front. It is quite a good knife, but I wouldn't buy it a second time. (Okay, maybe a third time since shopping for a rounded-tip, serrated knife I would almost certainly purchase the Victorinox Cutlery 4-inch The half-way mark The Round Tip Wavy Edge Steak Knife from 18 inches comes with a wavy edge.
