This knife was impressive for the first time I used it I cut 160 pounds of boneless ribeye steaks, 10 pounds of beef tenderloin, and 25 pounds of New York strips with it. I loved it, I cut my cutting time in half my arm felt amazing after I had cut it. I highly recommend this book.
This knife is pricey, but it is good. In own a grocery store, I have one of these knives in each of my meat cutters' hands and they all like it.
I have cut huge fish with the tool, as well as trimming and deboning meat.
It's good for cutting large amounts of meat.
