The reason we use 420J2 Japanese steel is that it is sub-zero treated and has a hardness of 53-54 HRC, also referred to as Unless you soak it in super harsh chemicals, our steel is almost impossible to break or rust due to its thickness and metal hardness. Japanese steel 420J2 is used instead of German steel for this purpose. We finish the blades with a water stone to give them the perfect brushed appearance.

They have a length of about 5", a width of 13/16" and a thickness of 1/8". Their feel in the hand is very good, and they are very effective. I was surprised to find the handles to be nicer than I was expecting. It was no problem for them to fit my block.

As soon as they were exposed to the sun, they rusted. It is clear that stainless steel is not the material. Companies are ripping off people so much that I'm so sick of it.

The knife that was dropped on the ground was the only one that looked used

All in all, it seems like a fairly good set of knives. One of the 6 knives had a damaged handle (the metal part at the end). I have not yet tested them to see if they rust. This knife appeared to be on the floor after being dropped. There should have been a quality control check done on this knife. How can I replace one of the knives?.

I was surprised by how well it went. Despite their sharpness, they are pretty, decorative and unique, which makes them look stunning on this magnet bamboo board, and even my friend who is a woodworker highly recommend these, and consider the price to be well worth it.

I have only used them once to cook prime filet. Since I only received the knives one week ago, I haven't used them yet. This looks like a very well-made product. I love the colors in this. I have used them with prime filet mignon once. These are very comfortable to hold and are very easy to cut with. To date, they have not needed to be sharpened. It would be a shame if I had to say something bad about these pretty knives, but I think that just looking at them on my magnetic strip makes me crave.

A great knife, a I could have expected them to arrive sharpened, except that their price was so high. The other 10 people I read reviews about did not seem to agree on this issue. So I figured I would get the book in any case. I love it. It's a dull affair. Apart from that, these knives are great.
