Blue Steel #1 with a hardness between 63 to 64 on the Rockwell scale is intricately forged with iron to create beautiful wave like patterns on the surface. For a knife to be so beautiful and perform such astoundingly well, it takes extremely high levels of skill. A Namiuchi piece combines aesthetics and high quality with the highest level of craftsmanship and materials.
As one of the most essential knives in any Japanese kitchen, the Yanagi Kiritsuke is designed especially for cutting thin slices of fish for sushi and sashimi, making it one of the most important tools in the repertoire of many cooks. A slight weight difference exists between the Yanagi Kiritsuke and the Yanagi. The Yanagi Kiritsuke's blade is wider and its spine Yanagi knives with sword tip balance the blade's weight and are recommended for chefs who would like to own a heftier knife but are interested in a Yanagi.
