This KEEMAKE deba knife is not only designed for chopping fish with precision, gutting that fish with ease, and filleting that fish, but is excellent for having poultry part out or as a vegetable cutter.
This knife has a German steel blade, but I am not sure what type of steel it is. The kitchen deba knife 6 is what I purchased. I bought a 1.25 inch from Amazon and it says it's a 1.50 inch. The German Steel 4116 is used for aircraft components. In my understanding, German steel tends to be harder than Japanese steel, so it needs to be sharpened less frequently. Based on the information that came with the knife, I do know that this knife is extremely sharp and slices and cuts better than any other item I have in my house because of the high hardness HRC 50+. However, if my other knives are proving difficult to use when cutting up meat, I just get this one and it will cut when all the others won't. The knife is very good looking. I will probably buy more of them once I get more experience with them.

It does not matter to me if I am an expert in Japanese steel. My goal was to buy a nice fish knife for breaking down large pelagic fish species on the west coast. I bought this knife because it looks good, offers good value, had the thickest spine I could find, and may have a full tang (I am not certain though). In the box, it appears to be a great product with great quality. There is a single blade and a single hilt, but it can still have a full tang when paired with the G10 handle. There are no sharp edges on the spine I agree (someone complained they had a mold line on their back). There is nothing more freaking razor sharp than the edge. If you are seeking a good deal on a deba knife, you'll have a hard time finding one.
You should know that it is a single edge knife. A nice thick blade, I can't imagine it ever wearing wouldn't have expected it to be as sharp as it is, but with a little work and a few strokes with the steel (just one side at a time), it shaved my arm nicely.
The blade is sharp and holds its I am impressed with the initial weight and quality of this knife. I look forward to using it for many years to come. I received this free of charge as part of a promotion, but my review is based on actual use of the product.
Fish fillets come out great with this tool. This is a great one, so do yourself a favor and get it.
Great knife! Makes all the difference over a standard kitchen knife. I recently tried making sushi at home with this knife and it's perfect for that. The knife is easy to handle and slices perfectly. I wouldn't hesitate to spend the money again. A great deal of generations will probably be affected by it.
