I'm not sure whether this is german steel or Japanese knife german steel. I bought a deba knife for my kitchen. 5 inch from Amazon, which claims to be 1. German steel number 4116 German steel, according to my understanding, is harder than Japanese steel and thus requires less sharpening. According to the information that came with the knife, this knife has the same reliable performance as Damascus knives, the thinnest blade for more precision with every cut and slice, and a better longer edge than steel knives due to the extreme hardness of HRC 50. I do know that this knife is extremely sharp and cuts and slices better than anything else I own. I still use my other knives, but if I'm having trouble cutting up meat, I just get this one, and it cuts when none of the others do. This is a very attractive knife, and I plan to buy more of them in the future because I enjoy them so much.

By no means do I consider myself an expert on Japanese steel. I wanted a nice fish knife for breaking down large pelagic species on the west coast. I bought this knife because it looks very nice, it doesn not break the bank, br>br>The quality appears to be excellent right out of the box. The blade and hilt are one piece and fit together with the G10 handle; however, the blade could still be a full tang. The spine is absolutely flawless. (Another poster complained about a mold line on their spine). The cutting edge is incredibly razor-sharp. I don't believe a better deba knife can be found for the money.
I don't think I'll ever wear it out because it's so thick. I expected it to be sharper right out of the box, but with a little elbow grease and a few strokes with the steel (on one side only, of course), it shaved my arm in no time.
It arrived on time, in good condition, and with a razor-sharp edge (use caution). For a right-handed person, it has a single beveled edge. There's also a knife for lefties. It's ideal for sushi sashimi.
Fish filleting has never been easier. Get a good one like this as a favor to yourself.

Yes, there are more expensive ones out there, but unless you're going to use them 8 hours a day, 7 days a week, why waste money when these are of high quality, extremely sharp, well constructed with quality in mind, and at a reasonable price. I recommend them and plan to buy from them in the future.
I found knives that were less expensive, but I have to believe they were less expensive because the quality was obviously lower. This knife costs a little more, but at $75, it's a good beginner's knife that would be suitable for any skill level. Some of these knives can cost up to $1200. For someone in the profession, $250 isn't bad, but for someone at home, it's a fantastic deal. A knife that is both durable and attractive, with all of the features that such a tool requires.
