Can't believe how well it turned out! The non stick coating on our old one was flaking, so we decided it was time to retire it. A second large one would have been nice (as this one The problem is that we weren't sure whether we should make a ceramic one (which doesn't do well with high heat), or a non-stick one (with PFOA free coating), which may not be safe for long-term use. The right amount of oil and the right kind of fat is all that makes a Wok stick free. As long as you use the right oil and fat, you won't have sticking problems. There doesn't appear to be a problem as long as it is stirred regularly. The fact that this has a lid, whereas our previous one didn't, is also very useful. Moreover, we like the fact that it can be washed in the dishwasher and is sink-safe as well. Then you have an easy time cleaning up. It is untrue that a wok is designed to maintain a high temperature under heavy load of food, especially meat. Assuming wok was heated to 400 degrees, I was able to bring it to a maximum of 215 degrees (F) with no food in the wok, before the wok thermostat automatically shut off the heat and that is how I took my picture A small amount of residue also accumulated on the bottom of the wok when cooking the stir fry. To rinse the wok and scrape the bottom, I had to boil water in it and use the wooden spatula that came with it, and then I had to use the Bar Keeper's Friend cleaner as specified in the manual to get the rest of the brown burnt residue This oven is not easy to clean and does not cook at the temperature that is dialed in.
