This lid appeared out of nowhere and exploded! Fortunately, no one was in the kitchen at the time. When I heard a glass break in the kitchen, I was in the living room. I went to investigate and discovered that it was this lid that had just exploded, scattering tiny glass fragments all over the place. Nothing landed on it. br>br> There was nothing that could be done about it. It was room temperature when I got it. Fits the Instant Pot as advertised and expands the pot's capabilities. , slow cook simmering and sweating of vegetables before adding other ingredients to finish a recipe, etc. br>As far as I can tell, the locking pressure cooking lid works well if you have limited cooking experience or if you're in a hurry; you simply press a button, close the lid, and trust it to do the job. When you want to cook in a more traditional manner, as if on a stovetop, but with extremely precise and consistent heat control- This lid opens up a lot of the functionality of the pressure cooker, such as sauteing and browning ingredients or sweating vegetables before adding liquids or meat and continuing with the pressure cooking portion of a recipe, or if you want to slow cook something without the intense heat and pressure blast of the pressure cooker. This is what I use to make marinara, bolognese, and a variety of other dishes. The ability to keep the sauces at a barely perceptible simmer all day as needed allows the tomatoes and/or meat to slowly break down to develop a good consistency while preventing the tomatoes from becoming bitter, which happens when you cook too quickly or on too high a heat, and you can easily remove the lid to stir and check consistency and flavor, which you can't do with a pressure cooker. The Instant Pot's stainless liner plays an important role in this as well. As a professional chef who has spent his entire career cooking on gas, I appreciate the consistent heat that this device provides when I cook at home, and this lid opens up a whole new world of functionality beyond just pressure cooking. The "simmer" and "saute" buttons, each with three levels of intensity, are extremely useful. Simmering on the lowest setting will almost imperceptibly bubble a sauce or "bone broth" with the lid on, while sauteing on the highest setting will rapidly and vigorously boil a sauce (or wine, etc. ) to quickly reduce, and there are four levels in between. Lids on, lids off, and lids ajar give you even more options. All of that can be done in a regular pot on the stove, but not with the level of predictability and temperature control available here.
