I think this is a nice, sturdy piece. It has now been used many times for both pizza dough and flatbread dough. Usually I use parchment paper under my pizza dough while baking, although I have sprayed PAM on before placing the flatbread dough straight on the pan and there were no problems. The cold-in my house is cooked by me As I was experimenting with fermenting the pizza dough at 550 degrees, I found that it worked best for me to have one of the pans preheating, while resting the other pan on the counter (with parchment paper beneath) to stretch the dough and top the pizza. The finish is awesome, they are strong and tough, but also sleek and elegant at the same time. The first time I tried making homemade pizza crust (cooked at 450 degrees) resulted in an epic failure, but the cheese and pepperoni toppings were delicious! As I cleaned the pans, I became concerned that the burned cheese would be difficult to clean off. The burnt cheese came right off after I soaked the pans in water for about 30 minutes, then scrubbed them with a scrubby sponge. It looks like they were just bought. Despite what you may see in the photos, these pans are far more impressive and beautiful than they seem. I am very happy with this.
