I don't use lemon essential oil in the filling, but I do add a few drops to the mixture. It adds just the right amount of zing to the dish!

It's enough to fill an entire pie plate. Lemon pudding is the best I've ever had. Not sickeningly sweet, but nice and tart.
It does not require baking because the filling is prepared on the stove. Bake the pie crust ahead of time.

This pie filling made me extremely happy. For Thanksgiving, I usually make a lemon meringue pie. I didn't have time to make the filling from scratch, so this was ideal; it was simple to prepare and extremely tasty.
