Mole sauce is the Cadillac of sauces. A lot of research was done before I ordered this particular brand of mole paste, and different internet sources pointed to Mayordomo from Oaxaca, Mexico as having the best quality. I've ordered this twice already to serve to guests and they have been delighted with it. My opinion is that it is just as good as any Mexican restaurant I have been to. There is a lot of condensed paste in the mixture. the soup, I added 1 quart of chicken broth and a large 28-ounce can of tomatoes, which I processed first in a food processor. I simmered the soup for five minutes then removed it from the heat. I then added 1/2 of a bitter chocolate bar such as Ghirardelli after continuing to heat the milk for 10 minutes. In the end, the sauce has a complex taste that is a bit sweet with a good kick of heat. My lunch served 12 people easily and there was plenty of leftover sauce. I served the sauce alongside grilled chicken breasts and it served 12 people easily. If there is any leftover sauce, it keeps for a week and can be added to eggs as well as many other For the foreseeable future, this is definitely going to be my mole of choice.
There are many different ways to taste things, so yours might differ from mine, but I thought this mole sauce was very good and flavorful. The paste is significantly better than anything in most markets, at least out of the Southwest. They take the unusual approach of mixing the paste with tomato paste and a little bit of chicken broth, rather than mixing chicken broth alone as is more common. There is only one negative part of this sauce, which I did not like. It is one of the pricier mole sauces I have tried so far.
