Each of the 4 oz cans I received was exactly what I ordered The total amount of 16 ounces is based on 4 cans. It is a pretty spicy mustard and requires only a small amount to make a big difference. You can have one can for a month if your taste buds are just the slightest bit sensitive. The stuff is good. I assure you that you won't regret it.
Our family has never paid attention to the expiration date (located on the label of the can top) since we mix the dry powder with water every time we use it. I'm using a can that is 7+ years past its "best if used by" date, and it is still good. You'll love it.
My opinion is that this is not the case. It is a very spicy mustard, similar to Chinese hot mustard. It tastes great with stir-fries and salads. I like fries, but they don't quite fit into the deli style category. I recommend you give it a try, you might enjoy

Since I was a child, I used this mustard regularly. I find that I cannot purchase a single small container of mustard from my local supermarket for a reasonable price. I am able to buy larger quantities of mustard powder from Amazon for much less than I would pay at my local store and I won't ever run out.

Then, I add more water, a bit at a time, until it is just a little thinner than what I want it to be. This is because I know that the yogurt will thicken a little bit by the time I put it The trick is to never get the consistency too thin, because once it is too thin, you can never get it right again. I suppose you could try to add more powder from a second can, but you might end up with lumps. My next step is to put all of these ingredients into a mustard squeeze bottle that I've already cleaned. Whenever I use mustard, I label it "HOT" so no one thinks it is regular mustard. Even though it is "hot" I only use it in small amounts, so the squeeze bottle lasts quite long for me. As a condiment for fish and sushi, as well as anything I would like to have a little horseradish flavor to it, I use it. Water gets really hot when it is mixed with this powder. It has an oriental flavor similar to wasabi that can be enhanced by adding some soy sauce. My opinion of this product can't be high enough, and I hope it will never run out.
I buy it by the case at Amazon, because it is a lot cheaper than buying it by the can at my local grocery store, so that is why I buy I use Colman's dry mustard in a lot of my cooking, including as a topping for meat loaves and in In your cupboard, it lasts a long time, but I store the extras in the freezer to make sure they last as long as possible. There is a mild heat to Colman's mustard as opposed to the fiery Chinese mustards that you may encounter, so it is not a substitute.
