This brown mustard seed is going to be used along with some McCormick yellow mustard seeds for making homemade mustard. After making my first batch, I marinated it in the fridge for a couple of weeks. tried it on some bratwurst and it caused a violent reaction in my mouth. My first instinct was to throw everything out and start again as I thought I could have poisoned myself by cultivating some kind of bacteria in the mustard. My second attempt at the exact same recipe turned out perfectly, but I didn't wait long to try the mustard an hour after After a few days in the fridge, they should be good to go The seeds were hydrated before adding vinegar, etc. I tasted the same foul flavor even without aging the seeds. As such, I did a re-write As a test, I hydrated a small sample of McCormick yellow seeds, these San Antonio brown seeds, and some Penzy's brown mustard seeds I also had, and tasted all three separately. McCormick, Penzy's, and San Antonio seeds were all tasty, but San Antonio seeds were not. They taste like. . . poison? Burning in a chemical way? I don't even know how to describe the taste. Poisonous? Burning in a chemical way? My opinion does not just stem from hating mustard seeds in general but from someone who actually likes mustard. * I chose not to request a return or replacement because I did not actually use my seeds for a while after purchasing them, and they cost just a little more than $10, so the shipping cost would not have justified the return. There is no way to tell if my experience is typical or if it was just an anomaly. My preference will probably be to continue to purchase Penzy's brown seeds in the future (which are much more expensive).
The only reason I got these was for the high myrosinase content of brown mustard seeds that these seeds contained. I don't know how you can grow a tree or make great mustard with these A chemical process forms this enzyme when glucoraphanin, a compound found in broccoli, is broken down into sulforaphane, which has a variety of health benefits. I ground up some of the seeds, put them in capsules, and add them to a broccoli smoothie or broccoli extract in order to supplement it.
It tastes like ground horseradish and will take your breath away. Those who want sesame chicken dipped in this product and don't mind tears and runny noses definitely need to purchase this.
The mustard sauce this makes is much better than the one I made with the Whole Foods store brand, which was exceptionally bitter. A good quality seems to be present in these seeds.
As well as being able to get them in large quantities, it is nice to do this.
The grainy mustard is something I make myself, so I was delighted to get these at this price.
Having purchased yellow mustard before, I was intrigued by the brown mustard seed. I decided to try it, it smells great, and it's a great addition to a salad. I'm eager to see how it will affect my freshly picked okra during the canning season.
