The Seeds are certainly a seed and so I would certainly believe that
I don't think they have been treated to prevent sprouting, but I believe they are intended to be used to cook and make mustard (the condiment).
You can eat these without worrying about gluten.

The mustard was one of the ingredients we used as we made our own. A nice flavor emerged from them. They turned out really well. All that is wrong with the bag is that it has a hole in it. In the event that it becomes open, we must place it in a new container. As far as the bag is concerned, we needed this for eating, and it's really good. Adding a little home-made mustard to a hot dog is awesome! This review has made my mouth water just writing it.
The mustard I made this way worked great when I fermented it myself. I sent a picture of the fermenting horseradish sauce that I sent to show the bubbles of the fermenting process. I need to buy again because I'm going to make horseradish sauce with mustard.
The mustard seeds I have here I do not know what kind they are! It appears that they should not be used for humans because they do not appear to be food. Sadly, I delayed using them and cannot return them, but I wanted to openly share or at least ask folks who have used/bought the seeds, if they had any issues. The seeds are slimy and I have used mustard seeds for years - it's really frustrating. My first experience with them being this way was years ago.
While I thought the price for this amount was pretty standard, I thought the quality would be good nonetheless. I received some old seeds in this package they were bruised and broken, and the seeds were not large in the package when compared with some others They tasted old in everything I used them for. There are other options if you have another choice. These are garbage being.
Making my own Hot Musturd was inspired by making hot dogs one day during the frigid winter and there was no Frenches Musturd in as far as I could tell. With some vineger and cayenne and a few other spices, I mash up some seeds I had in the spice rack. It's a dude! That sauce is awesome! That's all I need to know. The more I get, the better.
I have not tried yellow mustard recipes, but I have combined it with brown seeds to make a satisfying mustard. It is a good value. When the seeds are opened, you will need to place them in a jar or other container, as there is no way to seal the bag, but a canning jar will solve this quickly.
Mustard seeds are a great thing to have in your pantry for making your own mustard. It turned out fantastic when I used equal parts brown and yellow mustard seeds in this whole grain mustard! After they have sat for a bit in the finished mustard, these seeds provide a nice mustard flavor with just a hint of spice.
My favorite aspect was the flavors, the packaging was very unfussy, and I got a lot of seeds for the price. I've used it to make homemade mustard a few.
