The cayenne peppers add a lot of flavor, seasoning, and heat to the dish.
It doesn't have the best flavor. It wasn't bad, but it wasn't outstanding. In order to get enough flavor, it was a little too spicy.
For more than a decade, I've organized crawfish boils for our LSU alumni chapter in Raleigh, North Carolina. Chris Freret approached us a few years ago and asked if we wanted to try his seasoning. I was skeptical at first because we had a good blend that we'd been using for a long time, but I decided to give it a try. THIS WAS THE BEST MOVE I'VE EVER MADE. We received a lot of unprompted compliments on the flavor that year, so we decided to stick with Geaux Creole. It's spicy, with a great mix of flavors that isn't overly salty. You can also use a small amount of liquid crab boil (we like Zatarain's). This material is fantastic - It has been verified by 100 Louisianans who have enjoyed it at our boils!.
It's the best seafood seasoning, in my opinion. It has a lot of flavor but isn't overly spicy or salty. When I boil chicken, I even put a few tablespoons in the water! Yum!.
